Ingredients to serve 6 people

To make the pissaladière dough you need the following ingredients.
- 500 g flour
- 2 teaspoons salt
- 250 ml warm water
- 3 tablespoons olive oil
- 1 ½ package baker’s yeast

Simultaneously, you should also prepare the following ingredients for the toppings.
- 1.5 kg yellow onions
- 10 black olives
- 15 anchovies
- 3 tablespoons olive oil
- 200 g cherry tomatoes
- Salt
- Pepper

We will now explain the pissaladière recipe with a homemade dough. Let us begin with the first step: the dough.

Making the dough

To make the dough, the Schneider multifunction food processor will be of precious help. In the processor’s bowl, start by mixing the flour, salt and yeast. Then add the oil and warm water. Once all the ingredients are in, knead the dough with the robot’s dough hook. Specifically use it on speed 1 until a soft dough forms. Count 5 to 7 minutes for this result. During this time, you may want to add a little bit of water if the dough is too dry or, on the contrary, some flour if it is too liquid.

Of course, if you do not own a food processor, you can knead the dough by hand.

Once the kneading is done, let the dough sit for about 1 hour in a warm area. Cover the bowl with a damp cloth – this way your dough will double in volume.

Preparing the toppings

Let’s us move on to the topping preparation phase of the pissaladière recipe. You may do this while the dough is sitting.

Start by cutting the onions into fine strips. Then place them in a pan which you will have previously spread with oil and heat them over low for 30 about minutes while stirring regularly. Meanwhile, you can start cutting the cherry tomatoes. For your information, you may use round tomatoes instead and cut them in thin strips.

After all this, preheat the oven to 180°C. Then spread the dough into a pizza dish. Of course, you need to wait for the dough to have risen to do so. Make an onion bed on the laid dough on which you may then place the anchovies, cut tomatoes and olives. Bake for 15 to 20 minutes in the 180°C oven.

You may enjoy your pissaladière hot, warm or cold to your preference. A green salad is a great side dish for this French Niçoise specialty.
